Blog Giveaway! Week Two - Crabapple Hill Embroidery Pattern!

We are having a giveaway each week for the whole month of July! We have four seasonal patterns to give away - Crabapple Hill's Gardner's Angel set. We are giving Spring - Hope, Summer - Charity, Autumn - Thankfulness, and Winter - Faith. This week is the Summer Angel, Charity.

My easiest summer dinner is chicken salad sandwiches with chips.

It is too hot in my house in July to do a lot of cooking. So, I create a salad bar with lots of lettuce, spinach, sliced vegetables, hard-boiled eggs, grilled and sliced chicken or steak. Everyone 'builds' their own salad and we often eat downstairs where it is cooler.

Our easiest summer dinner is fire grilled hot dogs followed by snores.

I asked my husband what my easiest summer dinner has been and he told me to say, "My husband grilling burgers!" I serve them with chips!

To me, "easiest" means no trip to the grocery store! We love to have fresh corn, green beans, roasted potatoes, sliced tomatoes and cucumbers. Any or all of those veggies- whatever is ready to pick from our garden.

Easiest summer dinner for us is grilled chicken served in a salad with peach tea and then homemade fruit popcicles for dessert. On another day in the week that we have chicken I grill up some extra and put it in the fridge to pull out for this recipe. All that's needed to be done that day is to make the dressing and peach tea. Fast, easy, and healthy and even the 2 yo loves it. ;)

Eggs and tortillas! Scramble two eggs and place on hot skillet. Place rice tortilla on the wet eggs and watch as tortilla adheres to the eggs. Press to make sure there is no "squishy" egg left. Flip and cook for another minute or so. Salt, pepper, add mayo and salsa. We like it with a lettuce leaf in it too. Yummy and fast!

My easiest summer dinner is grilled chicken, grilled potatoes, baked beans and fresh fruit. My husband does the grilling. He is much better at it than I am.:)
